The AI only knows what you've published on your site plus what you've added through Knowledge Artifacts. If it doesn't have an answer, it says so and offers to connect the visitor with a human. This behavior is enforced in the system prompt, not just promised.
When the conversation gets serious, the AI sends a push notification to your team's phones through a Progressive Web App. The first person who taps the notification joins the conversation. The AI goes silent while the human talks. When the human disconnects, the AI resumes. If nobody is available, the AI collects contact information without revealing that no one picked up.
